As a restaurateur, Akmerkez Lokantacılık underwrote a classically posh eatery in 1996 by bringing Paper Moon, the world's most famous Italian restaurant chain, to Istanbul. With an intuitive and meticulous management style, Paper Moon puts a spotlight on classical concepts and never compromises quality. One of the most exclusive and prestigious brands in the food and beverage industry, Paper Moon is now a city classic, with 77 employees managed by Italian Chef Giuseppe Pressani. To preserve the quality flavors of Mediterranean menu selections carefully prepared, the restaurant's employees are inspected quarterly for two weeks each time by Paolo Lattanzi, the Italian consultant.

Since first opening, Paper Moon has offered customers not only an elegant setting in the city's most exclusive area but also quality service and presentation. In addition, the restaurant's award-winning architectural design and lighting have attracted industry attention. In fact, Paper Moon's success was noted even more by winning the 1997 "Interior Design" award from Restaurants and Institutions-New York and the "Interior Lighting" from Lumens-New York the following year.
